This may be the first time ever that a current participant in the Ironman World Championships in Kona, HI has ever been featured in something called The Sunday Doughnut. Nell Stephenson is one of the most fascinating people I have ever had the pleasure to interview. Not only is she a world class athlete but she is also an author, fitness trainer, nutritional consultant and trained chef who has a mission of changing the way America eats.

Nell is the co-author of The Paleo Diet Cookbook, with Loren Cordain, PhD and Lorrie Cordain. She grew up in upstate New York with her parents, Dave and Ellen (who were about as hippie-San Francisco as you could get!) and younger brother, Dave. She studied Exercise Science at USC, followed by culinary school. She worked as a private fitness trainer and then later as a nutritional consultant.

Nell now owns and operates her online paleo nutritional counseling business with clients around the globe to help them learn how to easily implement the principles of the Paleo diet into their lives: effectively, efficiently and permanently. She’s working towards her long-term career goal of changing how the America (or maybe even the world!) eats, one person at a time! In addition, she is coordinating Paleo implementation programs for private gyms, corporate health teams and other organizations interested in the well-being of their people. She consults for restaurants developing Paleo menus, has blogged and twittered about all things Paleo since 2007 and is producing a series of “How To Cook Paleo” DVDs. Nell resides in Los Angeles, CA with her husband Chris and two (totally Paleo) Weimaraners, Graham and Daisy.

When I asked Nell what tip she would like to offer you she immediately said, “Here’s my best tip for everyone.”

“Dream big, set lofty goals, and go for it no matter what anyone else thinks or says.

If you believe you can, then you might, if you believe you can’t, you definitely won’t.”
